Temple Cuisine – Pure Vegetarian – 27 September 2020


We will be learning how to create a few vegetarian dishes in our masterclass designed for the pure vegetarians’ delights. We titled the masterclass as a ‘Temple Cuisine – Pure Vegetarian’.

We observed the philosophical teaching of Buddhist Vegetarianism which recommends a vegetarian diet. According to some sutras, the Buddha himself insisted that his followers should not eat the flesh of any sentient being. However, we as chefs believe a balanced diet would work very well for the ecosystem.

It is interesting to imagine how temple cuisine in India made its way from places of worship onto the menus of a five-star hotel. We will discuss the fascinating story and perhaps try to map out the future of our regular diet.

  • Double Gloucester cheese in three ways, pakora, mousse and salsa
  • Jackfruit pancake roll, tenderstem broccoli, mushroom chaat
  • Egg Byriany with cumin raita, yoghurt and mint lassi
  • Apple pie samosa, apple chilli and barry chutney, kulfi
